Malfatti are basically made with a mixture of ricotta cheese, flour and spinach. They are delicious, light and fluffy dumplings.

Ingredients to make Paneery Malfatti in Tomato sauce

  • MALFATTI: 1 cup paneer
  • 2 cups spinach
  • 1/4 cup grated cheese
  • 1 tbsp flour
  • 1 tbsp semolina
  • A pinch of nutmeg
  • salt to taste
  • ITALIAN TOMATO SAUCE: 1/2 kg tomatoes
  • 1/2 onion
  • 2 garlic cloves
  • 1 tbsp olive oil
  • Black pepper 1/4 tsp
  • 1/2 tsp mixed herbs
  • salt to taste

How to make Paneery Malfatti in Tomato sauce

  1. CHEESE, GARLIC, ONION, TOMATO, PANEER, SEMOLINA, ALL PURPOSE FLOUR, SPINACH, NUTMEG, BLACK PEPPER
  2. TO MAKE TOMATO SAUCE: BOIL TOMATOES FOR 2-3 MINUTES.
  3. ONCE COOL ENOUGH, PEEL THE TOMATOES SKIN.
  4. CHOP 2 GARLIC CLOVES, 1/2 ONION AND 1 PEELED TOMATO. PUREE 2 PEELED TOMATOES.
  5. SWEAT ONION AND GARLIC IN A TSP OF OLIVE OIL.
  6. ADD CHOPPED TOMATOES AND TOMATO PUREE. COOK FOR 12-15 MINUTES.
  7. ADD SALT, BLACK PEPPER AND MIXED HERBS TO TASTE.
  8. ONCE SAUCE IS COOKED, ADD A PINCH OF COOKING SODA TO BALANCE OUT THE ACIDITY OF TOMATOES. KEEP ASIDE
  9. TO PREPARE MALFATTI, WILT THE SPINACH WITH A SPLASH OF MILK AND A PINCH OF SALT.
  10. TRANSFER TO A SIEVE AND ALLOW TO COOL.
  11. SQUEEZE OUT AS MUCH WATER AS YOU CAN FROM THE SPINACH.
  12. CHOP THE WILTED SPINACH FINELY.
  13. IN A BOWL, ADD PANEER (PREFERABLY RICOTTA CHEESE), FLOUR, SEMOLINA
  14. PINCH OF NUTMEG, SALT AND CHOPPED SPINACH.
  15. ADD GRATED CHEESE.
  16. MIX UNTIL EVERYTHING EVENLY INCORPORATED.
  17. KNEAD FOR 4-5 MINUTES, UNTIL IT FORMS A DOUGH KIND OF.
  18. MAKE TENNIS SIZE BALLS OUT OF MIXTURE.
  19. LIKE THIS
  20. COOK COVERED IN SALTED BOILING WATER FOR NEARLY 14-16 MINUTES.
  21. ONCE COOKED, TRANSFER THEM GENTLY IN COOL WATER TO HALT COOKING PROCESS.
  22. TO SERVE, MAKE A BED OF TOMATO SAUCE.
  23. PLACE SOME MALFETTI OVER IT.
  24. GARNISH WITH SPINACH AND PANEER CURLS.
