Lemongrass Pannacotta with Lemon Sauce

Ingredients to make Lemongrass Pannacotta with Lemon Sauce

  • PANNACOTTA
  • cream 200 ml
  • Milk 1/2 cup
  • sugar 4 to 5 tbsp
  • lemongrass shoots 1/3 cup
  • Gelatin 5 gms (dissolved in water)
  • FOR lemon SAUCE
  • Juice of 4 lemons
  • Zest of 1 big lemon
  • sugar 6 tbsp
  • FOR BASIL SEED
  • BASIL seeds 1 tbsp soaked in water

How to make Lemongrass Pannacotta with Lemon Sauce

  1. PUT THE CREAM IN THE PAN
  2. ADD MILK
  3. STIR. JUST HEAT CREAM & MILK. DON'T BOIL THE MILK.
  4. ADD LEMONGRASS SHOOTS.
  5. STIR
  6. COVER AND LET THE LEMONGRASS GET INFUSED IN THE CREAM FOR 30 MINS
  7. STRAIN THE CREAM TO DISCARD THE LEMONGRASS SHOOTS
  8. HEAT THE CREAM AGAIN ADD SUGAR
  9. ADD GELATIN( BLOOM THE GELATIN IN WATER AND KEEP FOR 5 MINS BEFORE ADDING)
  10. POUR THE CREAM IN THE GLASSES AND REFRIGERATE FOR 30 MIN.MEANWHILE PREPARE THE LEMON SAUCE
  11. TAKE LEMON JUICE AND ADD SUGAR
  12. ADD LEMON ZEST
  13. COOK TILL REDUCED AND THE SUGAR CARAMELIZED
  14. POUR THE LEMON SAUCE OVER OUR CREAM PANNACOTTA
  15. GARNISH WITH BASIL SEEDS( SOAKED IN WATER FOR 5 TO 10 MIN)
