Bhareli Vangi

Ingredients to make Bhareli Vangi

  • 10 baby brinjals
  • 10 tsp dessicated coconut
  • 8 tsp roasted and crushed peanut powder
  • 1/4 tsp turmeric powder
  • 1/2 tsp chilli powder
  • 1/4 tsp garam masala/goda masala
  • 2 tsp tamarind pulp
  • 2 tsp jaggery water
  • 1/2 tsp cumin seeds
  • Salt to taste
  • 1 /2 tsp mustard seeds
  • Oil for cooking
  • Water 1/2 cup for gravy

How to make Bhareli Vangi

  1. Prepare the stuffing in a bowl, add turmeric powder, red chilli powder, desiccated coconut, crushed peanut powder, salt and goda masala or garam masala.
  2. Wash and dry these brinjals. Cut into four but leave them attached at the stem. Stuff these brinjals with the prepared masala. Heat oil in a pan and add the mustard seeds and cumin seeds. Once it crackles, put the stuffed brinjal into the pan.
  3. Pour water and cover till it's cooked and becomes soft. Now add tamarind and jaggery water. Then add salt to taste (be careful as we add salt in stuffing as well).
  4. Serve it hot with rice or chappati.
