ABOUT Masala Bharva Baingan (Masala Stuffed Eggplant) RECIPE

Masala Bharva Baingan, I guess this one recipe is popular in every region and we all make it in our own way. I cannot say this recipe of mine is from east,west,north or south because in this recipe I have mixed spice which gives fusion flavor and taste really best. This not only goes well with rice you can also enjoy this yummy gravy with your paratha, roti or phulka.

Ingredients Serving: 4

  1. Baingan- 10 pieces, slit all 4 side, do not cut fully
  2. Onion- 2 medium size
  3. Ginger Garlic Paste- 1 tbsp
  4. Grates coconut- 3 tbsp
  5. Groundnut- handful
  6. Fennel seeds- 2 tsp
  7. Cumin seeds- 1 tsp
  8. Sesame Seeds- 3 tbsp
  9. Dry Red Chillies- 4-5 nos
  10. Coriander Powder- 2tsp
  11. Chilli powder- 2 tsp
  12. Tamarind- 2 small button size
  13. Jaggery- 1/2 tsp
  14. Salt to taste
  15. Oil as required
  16. Tomato- 2 small cut in length wise
  17. Coriander leaves- A handful

Instructions

  1. First slit baingan in 4 side and dip in salt water and set aside.
  2. Now heat pan and dry roast ground until it turns brown. Remove from pan and allow it to cool, once cool down remove peel and set aside.
  3. In the same pan roast sesame seeds and fry until it turns brown, remove from pan and allow it to cool with groundnut
  4. Continue dry roasting grated coconut in the same pan roast for 5 mins once it starts changing color add cumin seeds, fennel seeds,dry red chilly and fry until it turns brown color.Remove from pan and set aside
  5. Now in the same pan add very little oil may be 1 tsp and fry onion until it turns pink in color, remove from pan ans set aside, switch off the flame and in the same hot pan add ginger garlic paste and roast for 1 min and remove.
  6. In same pan roast coriander powder and chilly powder and set aside
  7. Now in mixer jar, add roasted groundnut,sesame seeds,roasted coconut masala, fried onion,tamarind,salt,ginger garlic paste and roasted coriander and chilly powder and grind it without adding water to coarse paste
  8. Now stuff this masala inside the each baingan neatly and set aside
  9. Now heat wide pan and add oil place all this baingan in pan, cover with lid and cook in medium flame for 5-6 mins.
  10. After 5 mins flip to other side and roast again for 5 mins, once baingan turns soft add sliced tomato and cook for another 5 mins
  11. If you have remaining masala add on to this masala to the baingan, add coriander leaves and cook in a low flame for another 5 mins.
  12. Just check if oil started floating on top of the baingan masala, it means your masala bharva baingan is ready to serve.
  13. Serve this yummy dish with steam rice and dal fry or with roti or paratha
