Ras malai

Ingredients to make Ras malai

  • For chena
  • 1 lit cow milk
  • 2 tsp of vinegar
  • 2 cup sugar
  • 3 tsp water
  • 1/2 tsp cornflour or aroroot optional
  • 6 cups water
  • For milk rabdi
  • 1 lit full fat milk
  • 1 cup sugar
  • kesar, few strands
  • badam 10 grated and few thinly sliced
  • 1/4 tsp Elachi powder.

How to make Ras malai

  1. For chena boil milk when starts boiling add diluted vinegar with 2 tsp of water .
  2. As soon milk curdles strain in a muslin cloth wash with cold water and hug for 30 min to drain water.
  3. Keep milk for rabdi to boil,add sugar,elachi powder,badam. Mix in between . Till it reduces to1/2.
  4. Kneed and mix chena for few minutes in a plate till it becomes soft and fluffy ,make small balls or any shape u like from it.
  5. in boiling water add sugar for rasgulla add them when sugar melts cover and cook for 15 min.
  6. Let both cool than strain rasgulla add in Randi milk.Serve chilled garnish,... yummy

My Tip:

Few pinch of baking powder with flour if ur rasgulla are not spoongy
