About Fried Potato & Egg Curry Recipe

I just tried a very simple Egg curry without any garam masala, I never thought this would come so tasty. Let me share my simple recipe here with you all

Fried Potato & Egg Curry

Ingredients to make Fried Potato & Egg Curry

  • Boiled egg- 5
  • Boiled potato- 1 big size
  • onion-1
  • tomato- 1
  • ginger Garlic Paste- 1 tbsp
  • Turmeric Powder - little to marinate egg and 1/2 tsp for Gravy
  • chilly Powder- pinch for marination and 1/2 tsp for Gravy
  • Kashmiri chilly powder- 2 tsp
  • coriander powder 2 tsp
  • water 1 cup
  • coriander leaves - handful
  • oil as required
  • salt as per your taste
  • Kasuri methi for flavour- 1 tbsp

How to make Fried Potato & Egg Curry

  1. Marinate Egg and potato in turmeric, chilly powder and pinch of salt. I have already added 1 tsp of salt while boiling egg and potato
  2. Grind onion, tomato, and ginger garlic paste to fine paste and set aside
  3. Heat deep pan or kadai, first fry your marinated egg and potato until golden brown. Remove from pan and set aside
  4. In the same kadai fry ground masala until raw smell of onion and ginger garlic disappears.
  5. Once masala is roasted well, add turmeric powder, chilli powder and coriander powder and coriander leaves roast for another 3 mins, add water little by little and continuously stir. Allow it to boil.
  6. Add Egg and Potato in to the gravy and allow it to boil for 3 mins.
  7. Switch off the flame and add crushed kasuri methi and cover with lids
  8. Serve this Egg curry after 5 mins with rice or Paratha
