Boondi ladoo

Ingredients to make Boondi ladoo

  • 1 cup besan
  • 3/4+ 2 tbsp water
  • 1 tbsp ghee
  • A pinch of kesar/food colour
  • Ghee for frying
  • For the Sugar Syrup:
  • 1 cup sugar
  • 3/4 cup water
  • 2-3 drops of rose essence
  • A pinch of food colour orange/red
  • Handful of chopped nuts to garnish, such as cashewnuts, pista, almonds dry rose leaves
  • 1 tsp elaichi powder
  • 2 tsp cardamom seeds

How to make Boondi ladoo

  1. First add the besan, food colour, melted ghee and water together, mix it well to make a pouring consistency of batter.
  2. Now heat oil or ghee in a pan, take a chalni or boondi seiver and pour this batter in to it in pan.
  3. Fry these boondis but don't fry it too much as we don't want it golden or crispy in colour. Take them out from the pan and keep it aside. At this point we can crush the boondi in a mixer for small boondi ladoo as well.
  4. To make the sugar syrup, start by mixing the sugar water and food colour, elaichi powder and let it boil. When it is hot enough add the boondi and mix well.
  5. Then turn off the gas and cover it, let the boondi absorb the sugar syrup for atleast 1 hour. Now add the chopped nuts as per your choice and make ladoos out of it.
  6. Garnish it with almonds, pista, kesar and cardamom seeds.

My Tip:

If you add a pinch of tartary powder (alam) in the sugar syrup, it will make your boondi ladoo moist from the inside.
