Baked Cheesy Eggplant Rings

Ingredients to make Baked Cheesy Eggplant Rings

  • 1 medium eggplant
  • 1/2 cup maida
  • 1 tsp garlic powder
  • 1.5 cup breadcrumbs
  • 1/2 cup finely grated cheddar cheese
  • 2 eggs beaten
  • 1tsp salt or as required
  • 1 tbsp red chili powder

How to make Baked Cheesy Eggplant Rings

  1. Preheat oven to 180 deg. Line a baking tray with parchment paper.
  2. Slice eggplant crosswise into 1/4" rounds.Using cutter, cut holes into the center of eggplant rounds. Discard centers
  3. In first bowl, toss together flour and salt. In second bowl, add egg and in third bowl, mix breadcrumbs, red chili powder, cheese and garlic powder
  4. Coat eggplant rings with flour, then coat with egg and finally with breadcrumbs mix. Place on baking tray
  5. Bake for 10 minutes, flip over and then continue baking for another 10 minutes. Serve hot with Sauce/Mayonnaise
