ABOUT Potato mousse basket RECIPE

Potato mousse flavoured by spinach and topped with chilli strawberry sauce.

Ingredients Serving: 4

  1. Potato basket
  2. Potato used for waffer 1/2kg
  3. Salt to taste
  4. Haldi 1/4 tsp
  5. Potato mousse
  6. Boiled and mashed potato 200gms
  7. Salt to taste
  8. Spinach puree 2tbsp
  9. Ginger chilli paste. 2tsp
  10. Strawberry sauce
  11. Salt to taste
  12. Strawberry 200gms
  13. Finely chopped green chilli 1/4tsp
  14. Sugar 2tsp
  15. Spinach crispies
  16. Spinach shredded 1/2 cup

Instructions

  1. For the potato basket
  2. Grate the potato and mix all ingredients.
  3. Mix well and make 6 equal portions.
  4. Spread each portion on a steel seive to make a cup shape.
  5. With the help of the other sieve hold it together and deep fry till crispy.
  6. Gentle remove from seive when fried golden brown and crispy.
  7. For the mousse.
  8. Blend all the mousse ingredients well in a blender till smooth and fluffy.
  9. Cook over low flame till it forms soft peaks. But should not loose it's green colour.
  10. For the sauce.
  11. Add all the ingredients in a sauce pan. Add salt as per taste and cook till the strawberries softens and looks like a sauce. Constantly stir it.
  12. For spinach crispy
  13. Fry the shredded spinach in oil till crispy. Remove on tissue paper.
  14. To assemble
  15. Put a tbsp of spinach crispies in the centre of the plate. Place your potato cup on it. Pipe out the spinach potato mousse on it and garnish with a tbsp of strawberry sauce. Finally sprinkle few spinach crispy on it. Serve with tea or coffee.
