About Potato mousse basket Recipe

Potato mousse flavoured by spinach and topped with chilli strawberry sauce.

Potato mousse basket

Ingredients to make Potato mousse basket

  • potato basket
  • potato used for waffer 1/2kg
  • salt to taste
  • haldi 1/4 tsp
  • potato mousse
  • Boiled and mashed potato 200gms
  • salt to taste
  • spinach puree 2tbsp
  • ginger chilli paste. 2tsp
  • Strawberry sauce
  • salt to taste
  • Strawberry 200gms
  • Finely chopped green chilli 1/4tsp
  • sugar 2tsp
  • spinach crispies
  • spinach shredded 1/2 cup

How to make Potato mousse basket

  1. For the potato basket
  2. Grate the potato and mix all ingredients.
  3. Mix well and make 6 equal portions.
  4. Spread each portion on a steel seive to make a cup shape.
  5. With the help of the other sieve hold it together and deep fry till crispy.
  6. Gentle remove from seive when fried golden brown and crispy.
  7. For the mousse.
  8. Blend all the mousse ingredients well in a blender till smooth and fluffy.
  9. Cook over low flame till it forms soft peaks. But should not loose it's green colour.
  10. For the sauce.
  11. Add all the ingredients in a sauce pan. Add salt as per taste and cook till the strawberries softens and looks like a sauce. Constantly stir it.
  12. For spinach crispy
  13. Fry the shredded spinach in oil till crispy. Remove on tissue paper.
  14. To assemble
  15. Put a tbsp of spinach crispies in the centre of the plate. Place your potato cup on it. Pipe out the spinach potato mousse on it and garnish with a tbsp of strawberry sauce. Finally sprinkle few spinach crispy on it. Serve with tea or coffee.
