ABOUT Chicken Seekh Kabab RECIPE

This indeed is one of the best appetizers to cook especially on a weekend. Always, thought this is difficult however it is not hence I make this once a month. Chicken Seekh Kebab, an amazing party starter, is made from perfectly minced meat with a lot of flavorful spices, baked in the tandoor to perfection. It is truly a dish made in heaven. The Chicken Seekh Kebab has a balanced blend of spices, which adds heat and acidity to the meat mixture. Mutton mince marinated with aromatic spices, chopped onions and fresh coriander shaped around skewers and grilled to perfection. The generous butter basting gives the kebabs a delicious charred outside and moist inside texture. The spices are incorporated so much inside the kebab that the flavor reaches some level of excellence. The garam masala add the heavenly flavor to the kebabs. These delicious Chicken Seekh Kebabs with mixed vegetables go great with mint chutney. They can also be served in tiffinsby wrapping them up in a roti.

Ingredients Serving: 2

  1. Minced/Ground Chicken (with some chicken fat) - 300 grams
  2. Onions chopped fine - 1/4th cup
  3. Green chillies chopped - 1 tsp
  4. Grated garlic - 1 tbsp
  5. Grated ginger - 1 tsp
  6. Coriander powder (Coarse) - 1 tsp
  7. Garam Masala Powder - 1 tsp
  8. Green Cardamom powder - 1 tsp
  9. Lime Juice - 1 tsp
  10. Mint Leaves chopped - 2 tbsp
  11. Red chilli powder - 1 tsp
  12. Butter/0il - 1 tbsp
  13. Salt to taste
  14. Chat Masala - for garnishing

Instructions

  1. The first trick in making kabas are to remove any water/moisture from the meat. After washing the meat thoroughly drain the water and roll them either with good paper towels or dry cloth for 2 hours.
  2. Use a blender/mixer to mince the chicken. (If you are using store bought mince chicken all you have to do is follow the first step of washing and removing excess moisture)
  3. To this, add all the above mentioned ingredients except the chat masala. Mix them thoroughly with your hand.
  4. Cover it and put it in the freezer for 7 to 10 minutes, this process will help the meat to hold on to the skewer without falling apart.
  5. Now wet your palms and take a small portion of the above mixture and make a ball out of it. Slowly press this ball around the skewer and flatten it. Make sure the meat is spread evenly around the skewer for the meat to cook evenly.
  6. Similarly take rest of the mixture make 5 balls and press out kabas.
  7. Place these on a baking dish and put it in the oven for about 10 to 15 minutes at 176 degrees celsius.
  8. Now turn sides and bake for another 10 to 15 minutes. Make sure to check in-between as the temperature settings for each oven is different. In about 25 -30 minutes the kabas are ready to be served.
  9. Squeeze some lime, sprinkle some chat masala on top and the kababs are ready to be devoured.
