Ingredients to make Vateli dal khaman

  • chana dal 1 cup
  • curd 1/4 cup
  • green chillies 5 + 5
  • salt 1/2 tablespoon
  • turmeric powder 1/2 teaspoon
  • asafoetida 1/4 teaspoon
  • oil 2 teaspoons + 7-8 teaspoon
  • mustard seeds 1/2 tablespoon
  • Few curry leaves
  • Fresh coriander leaves for garnish
  • Eno or fruit salt 1/2 tablespoon

How to make Vateli dal khaman

  1. SOAK CHANA DAL IN WATER FOR 6-8 HRS
  2. STRAIN WATER
  3. GRIND WITH CURD , 5-6 GREEN CHILLIES AND ENOUGH WATER
  4. TRANSFER TO A BOWL AND LET IT TO FERMENT FOR 7-8 HRS
  5. THEN MIX IT
  6. ADD SALT, TURMERIC POWDER AND ASAFOETIDA
  7. GREASE THE TRAY WITH OIL
  8. ADD 2 TEASPOON OIL AND FRUITSALT
  9. ADD 1 TEASPOON WATER OVER IT AND STIR IMMEDIATELY IN ONE DIRECTION
  10. POUR INTO GREASED TRAY
  11. STEAM INTO DHOKLA MAKER FOR 20 MINUTES AT HIGH FLAME
  12. CHECK WITH KNIFE .IF IT DOESNT STICK KHAMAN IS READY
  13. SCRATCH EDGES WITH KNIFE
  14. DEMOULD IT TO OTHER PLATE
  15. CUT INTO SQUARE PIECES
  16. SPONGY KHAMAN IS READY
  17. HEAT 7-8 TEASPOON OIL IN PAN. ADD MUSTARD SEEDS
  18. WHEN START SPUTTERING, ADD 5 GREEN CHILLIES AND CURRY LEAVES
  19. SPREAD TADKA OVER KHAMAN WITH SPOON
  20. GARNISH WITH FRESH CORIANDER LEAVES.
