ABOUT Spinach Methi butter cookies RECIPE

A healthy twist for cookies! these are great for snacks with drinks!

Ingredients Serving: 4

  1. Maida –1/3 cup
  2. Whole Wheat Flour – 1/2 cup
  3. Besan / Gramflour – ½ cup
  4. Butter softened – 1/3 cup
  5. Thick Yogurt (at room temperature) – 2 tbsp
  6. Washed and chopped spinach – According to taste
  7. Kasuri Methi – 1 tbsp
  8. Roasted Jeera – 1 tsp
  9. 1/2 tsp mix of roasted cloves and big elaichi ( powdered)
  10. Red chilly powder as per taste
  11. Salt – As per taste

Instructions

  1. Preheat the oven to 180 C. Line the baking tray with parchment or grease with butter.
  2. Sift the flours, salt and spices together in a bowl and set aside.
  3. Add the softened butter and knead. Add the spinach, methi and roasted cumin/ jeera. Add the 2-3 tbsp curd.
  4. Roll the dough really thin and cut with a pizza cutter into this shape
  5. Place on baking tray and bake for about 15 minutes on one side.
  6. Turn all the pieces over and bake for another 10 minutes or until it browns on the top and becomes crisp.
  7. Cool on a wire rack and transfer to an air-tight jar when completely cooled.
