About Handvo Recipe

It's a traditional Gujrati recipe.

Handvo

Ingredients to make Handvo

  • rice 1/2 cup
  • chana dal 1/4 cup
  • Mung dhuli dal 1/4 cup
  • Urad dhuli dal 1/4 cup
  • Grated bottle gourd 1/2 cup
  • Grated carrot 1/2 cup
  • Chopped cabbage 1/2 cup
  • Chopped beans 1 tbsp
  • Chopped coriander 2 tbsp
  • salt as per taste
  • chilli powder 1/2 tsp
  • A pinch of turmeric powder
  • Chopped green chilli 1
  • ginger paste 1 tsp
  • lemon juice 2 tsp
  • sugar 1 tsp
  • curd 1/2 cup
  • baking soda 3/4 tsp
  • For tempering:
  • oil 3 tbsp
  • curry leaves 10-15
  • A pinch of asafoetida
  • cumin seeds 1 tsp
  • mustard seeds 1 tsp
  • sesame seeds 2 tsp

How to make Handvo

  1. Soak the dal and rice for 4-5 hours. Start by grinding the rice coarsely, then add the dal and grind it coarsely as well.
  2. Heat a pan, add oil, hing, jeera, rai, til, curry leaves, once it splutters turn off the gas.
  3. In the dal and rice batter, add the chopped vegetables, lemon juice, sugar, curd, salt, red chilli, turmeric powder, ginger and mix well.
  4. Add half the amount of tempering into the batter. Then add baking soda in the end and mix well.
  5. Pour this batter into a greased cake tin. Pour rest of the tadka on top of the handvo and sprinkle some red chilli powder as well.
  6. Bake it in a preheated oven at 200 degrees celsius for 15-20 mins.
  7. Serve it warm.

My Tip:

Insert a knife, if it comes out clean then the handvo is ready.

is it necessary to bake it ? can't it be made by steaming just like Dhokla ?
