fusion recepie...with lots of vegs, coconut milk

Thai pani puri..

Ingredients to make Thai pani puri..

  • 30 readymade puris
  • 1/4 cup coconut milk powder
  • 1 1/4 cups milk
  • 1 tbsp cornflour
  • 2 tbsp butter
  • 3 cups finely chopped mixed vegetables(onions, cabbage, carrot, capsicum and babycorn)
  • 1 1/2 tbsp finely chopped green chillies
  • 1 tsp ginger (adrak) paste
  • 1 tsp garlic (lehsun) paste
  • salt to taste
  • For The Garnish 1/4 cup finely chopped spring onions whites and greens

How to make Thai pani puri..

  1. combine the milk, coconut milk powder and cornflour in a deep bowl and mix well using a whisk till no lumps remain
  2. Keep aside.Heat the butter in a broad non-stick pan, add the mixed vegetables and sauté on a medium flame for 5 minutes
  3. .Add the green chillies, ginger paste and garlic paste and sauté on a medium flame for 1 minute.Add the coconut milk powder-cornflour mixture and salt, mix well and cook on a medium flame for 2 minutes, while stirring continuously.
  4. Keep the stuffing aside to cool slightly.Just before serving, re-heat the stuffing till warm.
  5. . Make a hole in the centre of each puri using your thumb.Fill each puri with approx
  6. . 2 tsp of the stuffing and garnish with little spring onions.
  7. serve immediately..
