About Suran Paalya ( Vrat ) Recipe

Suran Paalya is a Karnataka based dish . This recipe doesn’t include onions , garlic and hing . Perfect for fasting season. Yams contain high carbohydrate, protein, vitamins, antioxidants, minerals, and dietary fibers. They are known to help the digestive system, being high in fiber, can be used for weight loss because of this, but have also other known benefits. They help in reducing the LDL and promotes healthy heart . Good for women by supplying essentials nutrients and energy .

Ingredients to make Suran Paalya ( Vrat )

  • Medium sized suran / elephant yam 1 boiled
  • mustard seeds 1 teaspoon
  • Dry red chillies 3
  • curry leaves 10
  • turmeric powder 1/4 teaspoon
  • red chilli powder 1 /2 teaspoon
  • tamarind thick extract 3 tablespoons
  • salt as required
  • jaggery one inch piece .
  • Grated coconut fresh 2 tablespoons
  • water 1 ladleful .
  • oil 1 tablespoon

How to make Suran Paalya ( Vrat )

  1. In a wok , heat 1 tablespoon oil. Splutter mustard seeds .
  2. Add red chillies and curry leaves . Fry for 2 seconds .
  3. Add the boiled yam pieces . Sauté for two minutes .
  4. Add the tamarind extract . Keep mixing till the yam pieces get coated with tamarind purée .
  5. Add the dry powders . Turmeric powder , red chilli powder , salt .
  6. Add a piece of jaggery .
  7. Sprinkle little water . Mix all the ingredients together to combine well .
  8. Finally add 2 tablespoons of freshly grated coconut and mix well for 2 minutes . Switch off the flame .
  9. Serve hot with your Vrat wale pooris or rotis or Sama pulao .

My Tip:

Don’t over boil the yams and make it mushy .
