Shahi Sabudana Rabri with Caramelised Dry Fruit Fower

Ingredients to make Shahi Sabudana Rabri with Caramelised Dry Fruit Fower

  • Rabri Ingredients :
  • full cream milk - 1 litre
  • 2 hours soaked sabudana - 1/2 cup
  • almonds chopped - 1 tablespoon
  • raisins - 10
  • sugar - 3 tablespoon
  • saffron strands - 10-12
  • Tutti frutti 2 tablespoon ( for Garnishing)
  • Chopped pistachio 1 tablespoon
  • green cardamom powder - 1 teaspoon
  • Caramelised dry Fruit flower ingredients :
  • sugar 2 tablespoon
  • Chopped mix dry fruits 1 tablespoon
  • poppy seeds 1 teaspoon

How to make Shahi Sabudana Rabri with Caramelised Dry Fruit Fower

  1. Rabri preparation :
  2. Add milk and saffron in a wok and bring it to boil. Keep boiling on low flame with occasionally stirring . Let it boil till milk thickens and remains half in quantity.
  3. Now add soaked sabudana . when sabudana is cooked and becomes transparent add sugar,green cardamom powder and chopped almonds .
  4. Allow it to boil for 2 mins.Add raisins . Switch off the flame.
  5. Let it cool completely.
  6. To make Caramelised disc :
  7. Now heat sugar , when it Caramelised add rest ingredients and keep stirring . Switch off the flame.
  8. Now quickly pour on greased plate and cut in flower shape with the help of flower cookie cutter . Let it cool completely . Nutty Caramelised flower is ready.
  9. Pour rabri in serving dish and Garnish with nutty Caramelised flower , tutty - frutty and with pistachio. Serve it cool.

My Tip:

Desired dry fruits can also be added.
