This recipe is very simple.

Ingredients to make Lauki kheer

  • 1tsp ghee,
  • 1 cup grated lauki,
  • 2.5 cup milk,
  • 1 pinch saffron strand,
  • 1/4 tsp cardamom powder,
  • 5tsp sugar
  • 1-2 tsp Rose water,
  • 10-12 cashews,
  • 1 tbsp raisins.

How to make Lauki kheer

  1. Rinse , peel and grate lauki.
  2. In a thick bottomed pan, heat 1 tsp ghee add lauki,
  3. Stir lauki well, saite it for 4-5 minutes on medium flame, then add 2.5 cup milk and stir, aftr 5-6 minutes add a pinch of saffron strands.
  4. Continue to simmer milk till it comes to a gentle boil.
  5. Keep on cooking milk till its reduced a bit, overall cook the milk for 15 to 20 minutes.
  6. Once the milk has reduced add sugar, cardamom powder, cashew. Switch off the flame add 2 tsp rose water.
  7. Serve lauki kheer hot or chilled garnish with munakka or raisins.
