  • FOR THE TARTS
  • 1.5 cups flour
  • 1/2 cup sugar
  • 10 tbsp cold butter
  • 1 egg yolk
  • 2 tbsp ice cold water
  • FOR THE lemon CURD
  • 2 large eggs
  • 1/2 cup sugar
  • Zest of 1 lemon
  • 1/3 cup lemon juice
  • 2 tbsp butter

How to make Lemon curd Tartlets

  1. TAKE FLOUR
  2. ADD SUGAR
  3. ADD COLD CUT BUTTER
  4. RUB THE BUTTER INTO HE FLOUR
  5. THE TEXTURE SHOULD BECOME GRAINY
  6. ADD THE YOLK
  7. ADD COLD WATER
  8. FORM A DOUGH
  9. REFRIGERATE THE DOUGH FOR 30 MINS
  10. FOR THE LEMON CURD:TAKE THE EGGS AND ADD SUGAR
  11. WHISK TILL PALE
  12. ADD LEMON ZEST
  13. ADD LEMON JUICE
  14. PLACE THIS ON DOUBLE BOILER
  15. AND WHISK TILL THE CURD THICKENS.APPRIX 10 MINS
  16. THIS SHOULD BE THE CONSISTENCY
  17. ADD BUTTER & MIX.PUT THE CURD IN THE REFRIGERATOR TO CHILL & THICKEN.MEAN WHILE MAKE THE TARTS
  18. REMOVE THE DOUGH AND ROLL IT
  19. TAKE FLOWER SHAPE CUTTER AND CUT THE TARTS
  20. GENTLY PLACE THE FLOWERS IN A MUFFIN TIN &PRESS THE FLOWER IN THE MIDDLE &PETALS ON THE SIDE
  21. TAKE A FORK AND PORT HOLES TO PREVWNT THEM FROM RISING
  22. BAKE IN A PREHEATED OVEN AT 180 D CELCIUS FOR 15 TO 18 MINS OR TILL THEY TURN GOLDEN
  23. FILL THE TART WITH THE LEMON CURD
