ABOUT Eggless Ricotta cheese and Semolina Cake (No oil used) RECIPE

It's a weekend, needless to say it's time to spend quality time with family. There are times during weekend I like to do some elaborate cooking, while sometimes rest is good, hence I like to do quick recipes to save time and at the same time enjoy with my family and friends. Today i am presenting to you a very simple, quick , easily liked by everybody cake, which is egg-less and oil-less. This cake does not rise like other cakes yet it's spongy, soft and perfectly baked.

Ingredients Serving: 4

  1. Ricotta Cheese - 15 oz or 425 grams
  2. Semolina/ Rava/Suji (Coarse Variety) - 1/4th cup
  3. Sugar - 1/2 cup
  4. Powdered green Cardamom- 1 teaspoon
  5. Broken cashews - 1 tablespoon
  6. Raisins - 1tablespoon

Instructions

  1. Preheat oven at 176 degree C.
  2. Mix all the above ingredients in a bowl and allow it to rest for about 10 minutes.
  3. Spread the batter evenly on a greased baking tray.
  4. Bake for about 30 minutes at 176 degree C and then let it rest inside the oven with the oven at switched off mode for another 10 minutes.
  5. The edges should be brown by now.
  6. Remove it from the oven and let it slightly cool down for 15 minutes.
  7. Flip it out, cut it into small pieces and serve warm.
  8. You can have this at room temperature too. Store it in the refrigerator and warm it before you have or you may have it cold if you like, since I like it either ways.

Hi Yasmin and Tejal......you could looks for some stores who keep stuff like these. I am not familiar with Mumbai however in Pune Dorabjee store does have it. If you cannot find rocotta cheese then you could curdle the milk to make fresh chenna and use it as a substitute for ricotta cheese however the texture will differ..... not much of change in the taste. Do try and let me know...
