ABOUT Chinese Orange prawns RECIPE

Orange chicken is one popular Chinese dish . And yeah Chinese prawns is a sister version . This is my fusion recipe , where I have adjusted the spice as per my taste . Hence , a slight colour change compared to the authentic recipe . Prepared this for lunch and God . We loved it . Taste was really beyond my expectations .

Ingredients Serving: 3

  1. Jumbo prawns , de shelled , deveined , cleaned , drained 1/2 kg.
  2. Corn starch 2 tablespoons
  3. White onion 1 medium sized finely chopped.
  4. Orange medium size 1 full seedless fruit used to extract thick juice
  5. Orange zest finely grated 3 tablespoons.
  6. Red chilli flakes 2 tablespoons
  7. Garlic cloves 5 finely chopped
  8. Salt as taste
  9. Tomato sauce 4 tablespoons
  10. Soy sauce 1 teaspoon
  11. Green onions finely chopped 5 tablespoons
  12. Canola / Olive oil 3 tablespoons
  13. Turmeric powder 1/2 teaspoon
  14. Ginger paste 1 teaspoon
  15. Freshly ground black pepper powder

Instructions

  1. Toss the prawns in a tablespoon of corn starch and turmeric powder . Rest for 10 minutes .
  2. Heat 2 tablespoons oil in a pan . Let the oil be super hot .
  3. Drop the marinated prawns in the hot oil and shallow fry both the sides . Fry till it turns golden and not too dark .
  4. Transfer the fried prawns to a plate . Set aside .
  5. In a mixer , take orange juice , red chilli flakes , fresh pepper corns 2 tablespoons ( adjust accordingly ) , orange zest , little tomato sauce . Grind into a coarse paste . Not too coarse nor smooth .
  6. In the same pan , heat oil . Fry the chopped garlic pieces . Add and sauté onions till translucent.
  7. Add a teaspoon of corn starch .
  8. Add a teaspoon of ginger paste . Mix .
  9. Pour the ground mixture . Keep stirring under low to medium flame .
  10. Add the remaining tomato sauce , soy sauce . Stir till the sauce thickens .
  11. The consistency is upto your choice .
  12. Add freshly chopped green onions . Add salt .
  13. Now add the fried prawns to this sauce and toss it well under high flame .
  14. In two minutes , the sauce thickens much better and coats perfectly over the prawns .
  15. Orange prawns are ready .
  16. Garnish with spring onions .
  17. Serve hot .
  18. The authentic recipe doesn’t include turmeric , ginger paste and black peppers. I modified as per my taste . Adding these are purely optional .
