ABOUT Yellowgreenidlis( instant) , no ferment idlis RECIPE

Idlis is one healthy universal dish . Trying variations by adding extra nutrients to the idlis is what I prefer . so such a variation is this yellowgreen fusion idlis. Mint peas green chillies give out spicy green idlis . Apricots give out yellow sweet, sour ,tangy idlis . These colourful idlis are sure a hit among children .

Ingredients Serving: 10

  1. Thin poha / flattened rice 2 cups
  2. Fresh yoghurt 3.5 cups
  3. Semolina / rice rava 1.5 cup
  4. Salt as required
  5. Green peas boiled 1/4 cup
  6. Mint leaves 1/4 bunch
  7. Green chillies 2
  8. Apricots dry and soft 5
  9. Turmeric powder 1/4 teaspoon
  10. Baking soda 1/4 teaspoon

Instructions

  1. Take 2 cups poha . Thin is preferable . Add 2 cups yoghurt and soak for 10 minutes.
  2. Poha becomes soft . Mash to a soft poha batter. Add salt and mix .
  3. Blend 1/4 cup boiled green peas, 1/4 bunch mint leaves , 2 green chillies,into a smooth purée.
  4. Use little curd for blending .Add 1.5 cups semolina to the poha batter.Divide this batter into 2 .
  5. Pour the green purée to the batter in 1st container. Mix well .Adjust yogurt .Add pinch of soda.
  6. Take 5 dry and soft apricots .
  7. Blend apricots , 1/4 teaspoon turmeric powder , little yogurt into a smooth yellow purée.
  8. Add this yellow purée to the other half of the batter kept in 2nd container. Mix.Add 1/2 pinch soda
  9. Grease the idli plates with ghee.
  10. Pour half ladle green batter to fill the first half . Then the yellow batter to fill other half .
  11. Repeat the same . Steam the idlis for 15 minutes . Instant Yellow green idlis are ready to serve .
