Amrakhand- Mango Flavoured Shrikhand

Ingredients to make Amrakhand- Mango Flavoured Shrikhand

  • Yoghurt/ Dahi- 4 cups, thick, tied up in a muslin cloth and left hanging for 5-6 hours or overnight to drain out the excess water
  • Fresh(preferably) or Canned Mango Puree- 1 and 1/2 cups, preferably of Alphonso mangoes
  • Sugar-1 and a 1/2 cups
  • Cardamom Powder- 1-2 teaspoon
  • Saffron/ Kesar- a few strands,mixed in 1/4th tea cup of warm milk
  • Chopped Almonds/ Pistachios- a handful

How to make Amrakhand- Mango Flavoured Shrikhand

  1. Take out the strained yoghurt into a mixing bowl.
  2. Blend the mango puree in a grinder, if making it fresh, after taking the skin off the mangoes and de-seeding them.
  3. Add the powdered sugar to the strained yoghurt and mix in. Add the mango puree and gently whisk it.
  4. Add cardamom powder and a little kesar mixed with 2 tablespoon warm milk. Garnish with almonds or pistachio nuts. Serve chilled.
My Tip: Goes best at lunch with a dry batata bhaji( sukhe aloo ki sabzi ), ambyache loncha ( raw mango pickle) and crispy , hot pooris on the side.
