ABOUT Amrakhand- Mango Flavoured Shrikhand RECIPE

This is a take off from the traditional sweet, refreshing Shrikhand. It is popular in Gujarat and Maharashtra. This is a seasonal delight, fresh mango puree is added to enhance the flavour. Soothing, cooling and light - perfect on the platter for summer :) This is popular in many Maharashtrian homes, cooked on Gudi Padwa that is celebrated in Maharashtra and Goa to mark the onset of the New Year as per the Hindu Calender.

Ingredients Serving: 6

  1. Yoghurt/ Dahi- 4 cups, thick, tied up in a muslin cloth and left hanging for 5-6 hours or overnight to drain out the excess water
  2. Fresh(preferably) or Canned Mango Puree- 1 and 1/2 cups, preferably of Alphonso mangoes
  3. Sugar-1 and a 1/2 cups
  4. Cardamom Powder- 1-2 teaspoon
  5. Saffron/ Kesar- a few strands,mixed in 1/4th tea cup of warm milk
  6. Chopped Almonds/ Pistachios- a handful

Instructions

  1. Take out the strained yoghurt into a mixing bowl.
  2. Blend the mango puree in a grinder, if making it fresh, after taking the skin off the mangoes and de-seeding them.
  3. Add the powdered sugar to the strained yoghurt and mix in. Add the mango puree and gently whisk it.
  4. Add cardamom powder and a little kesar mixed with 2 tablespoon warm milk. Garnish with almonds or pistachio nuts. Serve chilled.
