ABOUT Mushroom Piroshki RECIPE

Traditional Russian Appetizer, this can be made from beef, lamb or mushrooms. Soft yet crunchy, these are delicious in taste

Ingredients Serving: 6

  1. For dough
  2. 13/4 cup all purpose flour
  3. 60 gms cold butter cut in cubes
  4. 1/2 cup sour cream
  5. 1 tsp Baking powder
  6. 1 tsp sugar
  7. Salt to taste
  8. 1 egg
  9. For stuffing
  10. 200 gms mushrooms chopped
  11. 1 boiled egg chopped
  12. 2 tsp Dill
  13. 6 spring onions chopped (only white part to be used)
  14. 1.5 tbsp sour cream
  15. 1 tsp Flour
  16. 2 tbsp Butter
  17. Salt to taste
  18. 1 tsp pepper
  19. 1 beaten egg for glazing

Instructions

  1. Sieve flour, baking powder and salt. Add sugar and butter. Mix well until flour is crumbly
  2. In another bowl, beat egg and sour cream. Pour this mixture over flour and knead soft dough. Cover dough and refrigerate for 1 hour. The dough can be refrigerated for 2 days
  3. For Stuffing: melt butter in a pan, add mushrooms and spring onions. Saute for 3-4 minutes. Add flour and mix well.saute for 2 minutes. Add sour cream. Mix well. Switch off
  4. Add boiled egg, salt ,dill and pepper to mushrooms mixture. Mix well. Stuffing is ready
  5. Divide dough in equal portions. Roll in circles, place stuffing in centre and seal edges. Using fork, make grooves to edges and place on baking tray. Glaze piroshki with egg
  6. Preheat oven to 180 and bake for 20-22 minutes until golden brown. Serve warm
