ABOUT Falafel RECIPE

Falafel is a middle eastern food, this dish was introduced to me by my husband. During his short stay in Israel, he tasted this, when he returned back home, he was praising this dish like never before. It made me curious to taste it, at last when I tasted it in an outlet, I couldn't agree more! The Falafel balls are made of chickpeas and are topped with salads, pickled olives, gerkins and drizzled with tahini sauces. It can be eaten alone as a snack or stuffed in pita pockets. So without any more delay, heading towards the process.

Ingredients Serving: 6

  1. Felafel recipe:
  2. 1 cup Chickpeas/ Kabuli chana
  3. 5 to 6 garlic cloves
  4. 1 large sized onion, finely chopped
  5. 1/2 cup Mint leaves chopped
  6. 1/2 cup flat Parsley (Coriander can be substituted)
  7. 1 tsp crushed black pepper
  8. 2 to 3 tbsp lemon juice
  9. 1 tsp cumin powder
  10. 1 tbsp olive oil
  11. 1 tsp baking soda
  12. Salt to taste
  13. 1/2 tsp coriander powder
  14. 2 green chillies, chopped finely
  15. Oil for frying
  16. Tahini paste/sauce Ingredients:
  17. 1/2 cup White sesame seeds
  18. 1/4 cup olive oil
  19. 2 tbsp chopped Parsley
  20. 4 Garlic cloves
  21. Salt to taste
  22. 1/2 cup water
  23. 2 tbsp lime /lemon juice

Instructions

  1. Wash the Garbanzo Beans well and keep in fresh water overnight or a minimum of 8 hours.
  2. Once ready to prep, rinse the Garbanzo beans once again, drain, and put them in a food processor. Process till it becomes of a bread crumb consistency. Pour out into a bowl and keep aside.
  3. In the food processor, drop in the garlic, green chillies and the Onions. Food process them together for a couple of whirls.
  4. Next, add in the herbs, mint, parsley and cilantro. Process it till it all breaks down to the same size as the Garbanzo Beans. Then pour out and combine it well with the Garbanzo Beans.
  5. Add in Salt, Pepper, Cumin Powder, Coriander Powder, Lemon Juice, Olive Oil and Baking Soda. Mix it well. Cover and keep in the refrigerator for 15-20 mins to allow the flavors to combine.
  6. Meanwhile, heat oil in a flat skillet on a medium heat. Once its hot, make patties/balls of the mixture with your hands.
  7. Drop these into hot oil and allow it to cook. Once done, turn and cook on the other side as well. Remove and place on a paper towel .
  8. To prepare the tahini paste, dry roast the sesame seeds on a low heat without changing its color till its crisp. Then transfer onto a plate and allow them to cool.
  9. Once it's cooled add everything in the ingredients except the water and grind into a smooth paste adding water little be little. Check the seasoning and add in more salt and lemon juice as per taste.
  10. Serve with Pita Bread and Hummus.
