Korean Veggies Noodle soup

Ingredients to make Korean Veggies Noodle soup

  • 1 cup mixed vegetables like cabbage , carrots, artichokes , sliced bell peppers .
  • 2 tbsp soy sauce
  • 1 tbsp gochujang chili paste
  • 1 tsp chopped garlic
  • 1 tsp sesame oil
  • 2 tbsp Kochukaru Korean chili pepper flakes
  • 1/2 cup firm tofu cubed
  • 1/2 scallion chopped
  • 3 cups vegetable stock or just water .
  • 1 pack sweet potato noodles

How to make Korean Veggies Noodle soup

  1. in a large pan , cook noodles as per instructions . remove and cut to medium length .
  2. in another pan stir fry all vegetables , adding sauce, oil , chili flakes, gochujang
  3. add some vegetable stock or water and allow to boil with vegetables
  4. , add noodles and tofu finally , cook few more minutes . add salt , and scallions for garnish .
