About Chinese Noodle Soup Recipe

A one-pot quick vegetarian noodle soup with crunchy mix of vegetables and thin vermicelli noodles in a spicy soy broth.

Chinese Noodle Soup

Ingredients to make Chinese Noodle Soup

  • 1 small packet vermicelli noodles
  • 3 green onions, white part chopped
  • 2 large cloves of garlic, finely chopped
  • 2 green chillies/jalapenos, sliced
  • 2 tablespoons of coriander leaves, chopped
  • 1 stalk celery, chopped
  • 1 cube of Maggi vegetable seasoning, crushed (optional)
  • 1 medium carrot, finely chopped
  • 1/2 capsicum or bell pepper, finely chopped (red or green)
  • 1/2 zucchini squash, quartered
  • salt to taste
  • 1 tablespoon dark soy sauce
  • 1 tsp vinegar
  • Celery leaves for garnishing
  • 2 tsp sesame oil or any other cooking oil

How to make Chinese Noodle Soup

  1. Prepare noodles according to package instructions in plenty of water and do not drain. Keep aside.
  2. Heat oil in a deep saucepan and once hot, add the garlic, green onions and green chilies. Saute for a few minutes until seared, on high.
  3. Stir in chopped celery and coriander leaves and fry again for a minute. Tip in the finely chopped vegetables along with the crushed maggi cube and stir fry on high for another minute; the vegetable should be crisp tender.
  4. Pour in the cooked vermicelli noodles along with the water and bring to a boil. Add more water if necessary and season with salt; remember, soy sauce too has some salt.
  5. Once it comes to a boil, stir in soy sauce and vinegar, give it a good mix and serve hot and quick Chinese style one-pot noodle vegetable soup with a garnish of celery leaves or chopped green onions.

My Tip:

Add any combination of vegetable you like but make sure they are cooked just enough to still have a bite in them. Feel free to use any type of noodles. Adjust seasonings according to taste.
