Raw Jackfruit Mushroom Vindaloo

Ingredients to make Raw Jackfruit Mushroom Vindaloo

  • Raw jackfruit 400 gm, cut into dices
  • Mushrooms 200 gm, cut into dices
  • Coconut milk 1/2 cup
  • Coconut water 1/2 cup
  • Red chillies 5 pieces, soaked in 1 tbsp vinegar
  • Cumin seeds 1 tsp
  • Mustard seeds 1 tsp
  • Peppercorn 1 tsp
  • Garlic cloves 6 pieces
  • Ginger paste 1 tsp
  • Sugar as per taste
  • Salt as per taste
  • Oil 1 tbsp
  • Few curry leaves and shahi jeera

How to make Raw Jackfruit Mushroom Vindaloo

  1. First cut the raw jackfruit and mushroom into dices, then boil them with salt. After boiling, drain the excess water and keep aside.
  2. Except the coconut milk and coconut water, mix in all the spices with vinegar and make a paste.
  3. In a pan, heat oil and add the curry leaves and shahi jeera. Saute the raw jackfruit and mushroom. Keep aside.
  4. In the same oil, add the masala paste, when the paste starts leaving the oil, add the coconut milk and coconut water.
  5. Then add the fried jackfruit and mushroom along with salt and sugar.
  6. Cover and cook for 5-7 mins in a medium flame.
  7. Serve it hot with rice.
My Tip: Coconut milk and coconut water can be used in place of wine. Alcohol free.
