About Phaanu Recipe

Phaanu is a signature dish of uttarakhand . It can also be done with Gahat dal or green gram.

Ingredients to make Phaanu

  • Arhar dal 1 cup
  • ginger 1 inch
  • garlic 6-7 pods
  • green chillies 2
  • mustard oil 3 tablespoons
  • ghee 1 tablespoon
  • jeera 1 teaspoon
  • asafoetida a pinch
  • turmeric powder 1/2teaspoon
  • coriander powder 1/2 teaspoon
  • salt accordingly
  • coriander leaves for garnishing

How to make Phaanu

  1. WASH SOAK 1 CUP ARHAR DAL FOR AN HOUR
  2. ADD 1 INCH CUT PIECES OF GINGER AFTER DRAINING THE WATER COMPLETELY
  3. ADD 6-7 GARLIC PODS
  4. ADD 3 GREEN CHILLIES
  5. ADD ADEQUATE SALT
  6. ADD EVERYTHING IN A BLENDER AND GRIND TO A SMOOTH PASTE
  7. LIKE THIS
  8. COLLECT THE PASTE IN A BOWL
  9. HEAT 1 TEASPOON OF OIL IN A TAWA
  10. TAKE LEMON SIZED BATTER AND FLATTEN THEM WITH YOUR FINGERS
  11. ADD IT TO THE HOT OIL AND FRY ON BOTH SIDES
  12. FLATTEN IT WITH THE BACK OF THE LADLE
  13. COOK TILL GOLDEN BROWN ON BOTH SIDES
  14. KEEP HALF OF THE BATTER FOR GRAVY AND ADEQUATE WATER
  15. MIX WELL AND IT SHOULD BE WATERY IN CONSISTENCY
  16. HEAT 2 TABLESPOONS OF MUSTARD OIL IN A HANDI
  17. ADD JEERA
  18. AFTER JEERA SPLUTTERS ADD ASAFOETIDA
  19. ADD TURMERIC POWDER
  20. ADD CORIANDER POWDER
  21. POUR THE WATERY DAL MIX
  22. I HAVE ADDED 1 MORE CHILLY FOR EXTRA SPICE
  23. BREAK THE DAL CUTLETS INTO SMALL PIECES
  24. SIMMER THE GRAVY FOR 10 MINUTES
  25. ADD THE DAL CUTLETS TO THE GRAVY
  26. LET IT SIMMER FOR 10 MORE MINUTES WITH OCCASIONAL STIRRING.
  27. GARNISH WITH CORIANDER LEAVES AND GHEE. PHAANU IS READY TO SERVE WITH STEAMED RICE
