Ingredients to make Aval /poha kesari .

  • Thin poha 1 cup
  • sugar 1 cup
  • water 2 to 2.5 cups
  • Vanilla essence 2 drops
  • turmeric powder 1/4 teaspoon
  • cashewnuts 10
  • salt ( optional )
  • ghee 5 tablespoons

How to make Aval /poha kesari .

  1. Dry roast 1 cup flattened rice . Thin is preferable. Thick is also fine. Don’t roast till brown .
  2. Cool it completely. Grind into a coarse powder . Not too coarse nor too smooth .
  3. Add a tablespoon of ghee . Fry the chopped cashews .Transfer to a plate .Heat 3 tablespoons ghee in the same pan.
  4. Gently roast the powder.Add 2 cups boiling water.Cook till poha turns nonsticky.
  5. Add 1cup sugar.Sugar melts.Add turmeric,vanilla essence.Add ghee . keep stirring continuously to ensure there are no lumps . Stir till kesari floats.Add roasted cashew nuts .
  6. Add ghee generously. Serve warm.

My Tip:

Roast the poha gently without turning brown . Add boiling hot water and mix well so that no lumps form. Poha should be nonsticky , which indicates poha is completely cooked . Add sugar immediately .
