ABOUT Italian Christmas Panettone Cake Bread RECIPE

Panettone is a sweet Italian dessert, it's a cake like bread and usually made in cylindrical shape. Main ingredient's are flour, orange /lemon zest, dry fruits soaked in homemade wine, tutti frutti, yeast, eggs and etc.

Ingredients Serving: 10

  1. Flour 3 Cups
  2. Eggs 3
  3. water 1/4 cup
  4. Milk 1/4 cup
  5. Yeast 21/4 tsp (active)
  6. Butter5 tablespoon
  7. Sugar 1/2 cup
  8. Orange zest 1 tablespoon
  9. Lemon zest 1 teaspoon
  10. Vanilla essence 1 teaspoon
  11. Salt 1 teaspoon
  12. Mixed dry fruits soaked in homemade wine (raisins, prunes, sultanas) 1/2 cup
  13. Tutti frutti 1/2 cup (red and orange)
  14. Icing sugar 1tablespoon

Instructions

  1. In a small bowl combine lukewarm water and milk(46 degrees centigrade), sprinkle active dry yeast. Let it sit for 5 minutes without disturbing.
  2. Add 4 tablespoon of flour and 1teaspoon of sugar and mix it with yeast mixture. Mix well till it combine thoroughly.
  3. Cover with a cling wrap till it doubled in volume for about 30 minutes.
  4. Take a bowl, add 3 eggs, sugar, vanilla essence, lemon zest, orange zest together and whisk well.Add the doubled yeast mixture to it and mix well.
  5. Using hand mixer with dough hook attachment, add flour and salt little by little till it's well combined.
  6. Turn to medium speed and let it mix for 5 minutes. Add butter and mix till it's well incorporated.
  7. Add dry fruits soaked in homemade wine and Tutti frutti and mix for few more seconds.
  8. Dump the mixture on a floured surface and work for a minute till it's well combined.
  9. Grease a large bowl and transfer the dough mixture and sprinkle oil over the top to stop from the crust formation.
  10. Cover with the cling wrap and let sit till it tripled the volume (it takes 3 to 4 hours or according to the weather conditions).
  11. Grease a Panettone mould or any cake tin (availability of tins) with butter and set aside.
  12. Once the dough has risen, dump it on a floured surface and pull it together, place it in the mould and brush the top with melted butter. Cover again for 2 to 3 hours until tripled in volume.
  13. Well risen Panettone is ready to bake.
  14. Preheat oven to 180 degree centigrade, brush the top of the Panettone with egg wash and bake it for 45 minutes or until when the skewer inserted comes out clean. Let it cool on a wire rack.
  15. Panettone is ready. Sprinkle icing sugar on top for a perfect Christmas celebration.
  16. Serve with hot coffee, hot chocolate or can have it plain.
  17. Though it's a long process, it's worth to bake and eat the Traditional Authentic Italian Christmas Panettone Cake Bread.
