About Atayef /Qatayef Recipe

Atayef/Qatayef is a middle eastern dessert. It is a very simple yet popular recipe commonly served during the month of Ramadan. These Arabic pancakes are cooked only on one side, the other side is velvety because it is covered with bubbles. This delicious dessert is filled with cream, half fold and sealed, sprinkled with crushed pistachio, topped off with rose flavoured sugar syrup. These are so light and sweet, that they make a perfect dessert for any party.

Ingredients to make Atayef /Qatayef

  • For pancake-
  • maida 1cup
  • Rawa 1/4cup
  • Baking powder 1tsp
  • yeast 1/2tsp
  • sugar 2tbsp
  • oil 1tsp
  • For sugar syrup-
  • sugar 1/4cup
  • water 1/2cup
  • cardamom powder 1tsp
  • Rose water 1tsp
  • lemon juice 1/2tsp
  • For cream -
  • Milk 1 cup
  • cream 1/4cup
  • sugar 1/4cup
  • cornflour 1tbsp
  • White bread 2nos
  • saffron few strands
  • cardamom powder 1/2tsp

How to make Atayef /Qatayef

  1. Preparation of pancake-Mix yeast with 2tbsp lukewarm water for 10mins.
  2. Take a mixing bowl and add all the ingredients under pancake including the yeast mixture.
  3. Prepare a thin batter by adding 1-1/2cup of lukewarm water.
  4. Cover and rest it for 30mins.
  5. Heat a nonstick tawa, pour 1 tbsp batter and wait for 1min.
  6. Bubbles will appear over the pancake. Wait till upper surface dries. Don't flip.
  7. Carefully place on a plate and cover with a kitchen towel.
  8. Repeat the same for all.
  9. Preparation of sugar syrup - Take a saucepan and mix all the ingredients written under sugar syrup. Cook till sugar melts. The syrup should be thin.
  10. Preparation of cream - Boil milk, add cream and sugar. Stir.
  11. Add crumbled bread slices, mix.
  12. Add cornflour slurry, stir continuously till creamy and thick.
  13. Add cardamom powder and saffron(soaked with lukewarm milk for 10mins).
  14. Mix well and switch off.
  15. For assembling - Take one pancake, fold a bit and seal from one side till half by pinching two ends together.
  16. Repeat the same process for all.
  17. Stuff prepared cream and sprinkle pistachio.
  18. Pour little sugar syrup on each pancake carefully.
  19. Serve like this or keep in the refrigerator for few minutes and serve.

My Tip:

If you need to make these in advance, you can make the pancakes in advance and store them in an airtight container.
