About Coconut Rice Recipe

This is a perfect tiffin option that can be made in a jiffy.

Coconut Rice

Ingredients to make Coconut Rice

  • basmati rice 2 cups
  • ghee 4 spoons
  • cumin seeds 1/2 teaspoon
  • mustard seeds 1/2 teaspoon
  • dried red chillies broken 3
  • Scraped coconut 2 cups
  • green peas, shelled and blanched 1 cup
  • large carrotvcut in to cubes 1
  • cashewnuts 9
  • salt to taste

How to make Coconut Rice

  1. clean wash and soak rice in three cups of water for fifteen to twenty minutes. drain and cook rice in sufficient salted boiling water till done.drain refresh and keep aside
  2. heat two tablespoons of pure ghee in a thick bottomed vessel and add cumin and mustard seeds.
  3. when they begin to change colour add red chillies and coconut and saute on medium heat for two to three minutes till it emits a nice aroma
  4. add green peas and carrots and continue to saute for a minute .add the cooked rice and salt and toss to mix well. transfer the rice onto a serving plate.
  5. heat one tablespoon of ghee in a pan,add cashewnuts and fry on low heat till light golden
  6. garnish the rice with cashews ,coconut, coriander and serve very tasty healthy food
