ABOUT Lemon Greentea Tiramisu with Homemade Savory Lady Finger RECIPE

Lemon and green tea add special taste to this light and fluffy treat that’s perfect for all occasions.

Ingredients Serving: 10

  1. Savoiardi (lady fingers)- 1 cup All purpose flour
  2. 1 stick butter
  3. 1 tbsp sugar
  4. 1/4 cup almond meal
  5. 1 tbsp buttermilk
  6. 1 tbsp dried mixed herbs
  7. 1/4 tsp black pepper
  8. salt
  9. Cookie base- 1 1/4 cup digestive/graham crackers
  10. 1/4 cup butter, melted
  11. Cream cheese filling- 1 cup mascarpone cheese
  12. 1 cup cream cheese
  13. 1 cup whipping cream
  14. 1 tbsp green matcha tea
  15. 1/2 cup icing sugar powdered sugar
  16. 1/4 cup lemon juice
  17. Extra matcha green tea powder for dusting

Instructions

  1. Preheat oven to 160'C.
  2. Cream butter and sugar together.
  3. Add buttermilk, flour, spices and salt. Form into a loose dough.
  4. Fill batter in piping bags fitted with big round nozzel and pipe the dough out in parchment lined baking tray.
  5. Bake them for 30-40 minutes until lightly golden brown in colour.
  6. Once baked, cool them in wire rack.
  7. Carefully place the lady fingers in the sides of spring foam pan.
  8. Mix together the cookie crumbs and melted butter to make the cookie base. Place in fridge to set for 20 minutes.
  9. Beat together the mascarpone, cream cheese, powdered sugar and matcha green tea with a hand mixer until smooth and there are no lumps.
  10. Pour in the cream and continue whipping until the mix thicken and holds stiff peaks. You want this mix to be stiff as we are not adding gelatin/agar-agar to the cheesecake
  11. Gently mix in lemon juice.
  12. Take your base from the fridge and spread cream cheese mix into the tin.
  13. Set the Tiramisu Cheesecake in the fridge overnight to firm up.
  14. When ready to serve dust the top with matcha green tea powder.
