ABOUT Homemade Queso Dip/Mexican Cheese Sauce RECIPE

Creamy, spicy and cheesy queso sauce or Mexican dip is a flavorful cheese sauce, perfect to be used as a dip with tortilla chips, as a nacho sauce or even as a ready sauce in macaroni and cheese.

Ingredients Serving: 4

  1. 2 teaspoons butter
  2. ¼ cup finely chopped red onions
  3. 2 to 3 green chillies/jalapenos/Serrano peppers
  4. 2 to 3 tablespoons finely chopped green onions
  5. ¼ to 1/3rd cup of milk
  6. 4 to 6 slices of sliced cheddar cheese (I have used Britannia cheese slices)

Instructions

  1. In a saucepan, melt the butter on medium heat. When the butter starts to melt, add the chopped onions, green chilies and 2 tablespoons of green onions.
  2. Saute for 1 to 2 minutes until the onions are soft and you get a nice aroma from the slightly fried onions, green chilies and green onions. Stir in milk (start with ¼ cup and add more if needed) and bring to a boil on medium heat, stirring
  3. When the milk comes to a low simmer, add about 3 to 4 slices of cheese, roughly cut up and continue to stir. Whisk until the mixture turns smooth and creamy.
  4. If you find the queso mixture too runny, add more cheese slices one at a time until you get the desired consistency of the cheese dip. Do not stop stirring and whisking.
  5. Once you dip or sauce is ready, remove from heat, garnish with more green onions (and more chopped red onions for added crunch!) and serve hot as a dip with tortilla chips, potato chips, pretzels, crackers or with any Mexican dish.
