About Enchiladas Vegetarian - Mexican dish Recipe

Enchiladas is Mexican dish. we roll the tortillas or rotis with vegetables and mashed beans. Spread the enchiladas sauce and cheese. It is healthy, dinner loaded with vegetables.

Enchiladas Vegetarian - Mexican dish

Ingredients to make Enchiladas Vegetarian - Mexican dish

  • 6 corn tortillas or Multigrain roti
  • 1 cup Mexican cheese
  • Chopped cilantro to sprinkle over the cheese
  • Enchiladas sauce:
  • 3 tomato puree
  • 5 cloves Garlic
  • 1 tsp red chilli flakes
  • 1/2 tsp Black pepper powder
  • 1 tsp Oregano
  • 1 tsp sugar
  • 1 tsp salt
  • 2 Tbsp olive oil
  • 4 Tbsp Mexican cheese
  • For filling:
  • 1 cup Bell pepper colored chopped
  • 1/2 cup mushroom
  • 1/4 cup spinach
  • 1/2 cup Dried beans cooked and mashed (As per you taste. I used kidney beans, broad beans, black eyed beans )
  • 1 tsp red chilli powder
  • To taste salt
  • 2 Tbsp olive oil

How to make Enchiladas Vegetarian - Mexican dish

  1. Enchiladas sauce: Heat oil in a skillet, saute garlic. Then add remaining ingredients cook till it reaches to a sauce consistency.
  2. For Filling:
  3. Heat oil in a skillet over medium heat, add vegetables and saute for 5 minutes.
  4. Now add mashed beans, chilli powder, salt and mix well. Set aside.
  5. Add 1/4 cup sauce to the vegetables and mix.
  6. Making Enchiladas:
  7. Preheat the oven to 360 F. Spread 1/2 cup sauce over bottom of baking dish.
  8. Place 4 tablespoons mixture in each roti / tortilla center. Roll up.
  9. Place seam-side down in baking dish. Roll all tortillas. Place it in a baking dish.
  10. Spread remaining sauce on top of tortillas. Sprinkle with remaining cheese.
  11. Cover he dish with aluminium foil. Bake for 30 minutes or until cheese melts. Serve hot.
