ABOUT Mexican bites RECIPE

This Mexican starter is quick to whizz up yet very nutritious . A must for party or even weekend feast with tea.

Ingredients Serving: 4

  1. 4 tortilla / roti
  2. 1 cup boiled kidney beans/ rajma
  3. 4-5 olives- cut in slices
  4. 1 medium onion, 1 tomato, 1 red pepper- diced
  5. 1/2 cup grated cheese- I’m using cheddar
  6. 2 tbsp hot ( Sriracha ) sauce + 1 tbsp sweet chilli sauce / tomato ketchup
  7. 2 tbsp sour cream — completely optional
  8. Oil to brush.

Instructions

  1. 1. Preheat oven to 180C.
  2. 2. Cut tortilla wraps in small circle with help of cookie cutter or jar lid. Brush all circles with ittle oil , lay them in muffin tray so they shape like a bowl. roast in oven for 10 minutes.
  3. 3. Take muffin tray out of oven . Top each tortilla bowl with onion, olives, kidney beans, tomato, pepper, sauce and at the last with cheese. Put all prepared bowl in oven for 15 minutes till they turn light brown and cheese melts.
  4. 4. Let them cool for 5 minutes and top them with sour cream or tomato ketchup . Ready to serve .
