Ingredients to make Paya - Goat trotters

  • 6 legs Paya/trotters
  • 1 onion
  • 1 tsp garlic paste
  • 1 tsp ginger paste
  • 1 black cardamom
  • 1 cinnamon stick
  • 3 cloves
  • salt to taste
  • For Gravy: 2 onions sliced
  • 2 tsp Ginger garlic paste
  • 1 tsp red chili powder
  • 1/2 tsp turmeric powder
  • 1/2 tsp garam masala
  • 1/2 cup curd
  • 1 tsp cumin powder
  • 1 cup oil
  • Fresh coriander
  • lemon juice.

How to make Paya - Goat trotters

  1. In a pressure cooker add all the ingredients for the paya. Add half amount of the salt. Cook in pressure cook for an hour until they are tender and water reduced to 1 glass.
  2. Separate paya pieces and strain the broth. Heat oil and fry onions until golden brown. Take fried onions out and blend with curd to make smooth paste.
  3. Add paya pieces to oil and fry on medium flame. Add ginger garlic paste, cook for a minute.
  4. Add yogurt and onion paste. Now add all the spices, salt and one cup water and cook for 3-4 minutes, then add paya broth.
  5. Simmer for 7-8 minutes, add chopped coriander and lemon juice. Serve hot with chapati or naan.

My Tip:

Good squeeze of lime perks up the flavor.
