ABOUT Zarda RECIPE

Zarda is a very common sweet in northern parts of India. It’s a sweet rice preparation also commonly know as meethi chawal.

Ingredients Serving: 4

  1. 2 cups rice
  2. 1 1/2 cup Sugar
  3. 3 tbsp ghee
  4. 2 small elaichi
  5. 2 cloves
  6. 1/2 tsp orange food colour
  7. 1 tbsp rosewater
  8. 3 tbsp Milk
  9. 4 tbsp chopped dry fruits
  10. Pinch of salt
  11. 1\4 tsp saffron

Instructions

  1. Wash and soak the rice for 1 hour.
  2. To cook rice, heat water in a large vessel add food colour, rose water and pinch of salt. When water starts to boil add rice to cook.
  3. When rice is 85% cooked, drain the excess water and transfer rice in a big bowl, mix sugar with rice and keep it aside.
  4. In a separate wok heat ghee, add small elaichi and cloves and fry for a minute, add chopped nuts and saute for another minute then add rice and sugar mix and saute for some time.
  5. Soak saffron in 3 tbsp of warm milk and sprinkle it over the rice and mix well. Reduce the heat and cover rice with lid and put it on dum for 10-12 minutes or till the rice is completely cooked.
  6. Before serving, sprinkle more dry fruits and serve hot.
