Veggie Croquettes

Ingredients to make Veggie Croquettes

  • 3 medium sized potatoes boiled and mashed
  • 3 tablespoons grated mozzarella cheese
  • 1 medium carrot grated
  • 1 green capsicum.finely chopped
  • 4-6 french beans cut them into small pieces
  • 1 onion finely chopped
  • 3/4 teaspoon salt
  • 2 -4 tablespoons oil
  • 1/4 cup coriander leaves finely chopped
  • 1/3 cup bread crumbs
  • 1/2 teaspoon grated garlic
  • 1/3 cup white sauce or mayonnaise
  • 1/4 teaspoon black pepper powder

How to make Veggie Croquettes

  1. Heat oil in a pan and add onions,capsicum,french beans and carrot and saute them until softened.Add salt and continue to saute for a minute.
  2. Take a large bowl and add boiled and mashed potatoes.Transfer all the vegetables from the pan into the same bowl.Mix well.
  3. Add black pepper powder,garlic and some coriander leaves into the bowl.Now add 1/4 of the bread crumbs also.Mix them well.
  4. Now Take two plates and in one of them spread white sauce and in the other one spread bread crumbs.
  5. Make a small ball like shape from the mixture in the bowl.Add some mozzarella cheese in between and roll it again.Do this to make 10-12 croquettes.
  6. Now roll the croquettes in the white sauce and then in bread crumbs and DeepFry them in a pan/kadhai.
  7. Garnish with some coriander leaves and serve with some toppings.
