ABOUT Budae Jjigae ( Korean vegetarian army stew ) RECIPE

A delicious Korean one pot filled with assorted vegetables, cheese, ramen noodles in a flavorsome stew

Ingredients Serving: 4

  1. 4 cups vegetable stock
  2. 250 grams tofu, sliced to 1/2 inch thickness
  3. 200 grams mushrooms sliced thin.
  4. 1/2 cup kimchi (bought )
  5. 1 pack instant ramen noodles
  6. 2 onions thinly sliced
  7. 2 bell peppers thinly sliced
  8. 1 cup cabbage thinly shredded
  9. 2 bell peppers thinly sliced
  10. 100 grams baby spinach or any greens of your choice
  11. 100 grams canned beans
  12. 2 slices of cheese
  13. for the sauce ...mix these in a bowl .. 2 tbsp korean chili flakes ( Gochugaru )
  14. 1 tbsp soy sauce
  15. 1/2 tbsp sugar
  16. 1/2 tbsp gochujang ( Korean chili paste )
  17. some ground black pepper

Instructions

  1. take a pot , add some water about 3 cups , add a pinch of salt and some shredded vegatbles mentione d, let it boil for few minutes till water is bubbling , switch off, this is the vegetable stock
  2. wash and chop all vegetables into smaller pieces, layer a pot with these ingredients , add vegetable stock , like cabbage, peppers, spinach, mushrooms, , tofu,kimchi, baby corn, canned beans ,
  3. next add the seasoning paste , let this stew cook for a while . then add the ramen noodles, place cheese slices , turn down heat when noodles seem cooked , garnish with sliced peppers
