ABOUT Mathura Ki Dubkiwali Aloo Ki Sabji RECIPE

Mathura ke aloo recipe is a thin spiced potato curry. It is a traditional recipe from the streets of Mathura, a small town of North India.

Ingredients Serving: 4

  1. Potatoes (medium) - 5 to 6 (Boiled, peeled and cut into cubes and slightly mashed)
  2. Green chillies - 4 (finely chopped)
  3. Cumin seeds/jeera - 1/2 teaspoon
  4. Ginger - 1inch (minced)
  5. Coriander powder - 1 teaspoon
  6. Red chilli powder - 1 teaspoon
  7. Turmeric powder - 1/2 teaspoon
  8. Amchur or dry mango powder - 1/2teaspoon
  9. Asafoetida - 1pinch
  10. Coriander leaves - 1/4cup (finely chopped)
  11. Water - 2 cups
  12. Oil - 1 tablespoon
  13. Salt to taste

Instructions

  1. Heat oil a deep bottomed pan, add chopped ginger, cook until ginger becomes light brown, cook on medium flame.
  2. Add asafoetida, cumin seeds, when cumin starts spluttering, add chopped green chillies.
  3. Add potatoes.
  4. Add coriander powder, red chilli powder, turmeric powder, salt and mix with potatoes. Sprinkle some water while stirring, cook for 2 minutes on medium flame.
  5. Add 2 cups water and cook till water starts boiling.
  6. Once water starts boiling, add garam masala, amchur powder or dry mango powder. Turn off the heat.
  7. Garnish with chopped coriander leaves.
  8. Serve hot with poori or kachori.
