ABOUT Mawa Puranpoli RECIPE

Chana dal is also called split bengal gram. It is highly nutritious, has a rich flavour and aroma, is amazingly delicious and gets easily digested. It is low in fat and helps to lower cholesterol. Also good for diabetic patients. Gud or Jaggery acts as a detox, as it helps cleanse the liver by flushing out nasty toxins from the body. Using these two healthy ingredients in Jai Ki Rasoi Se made an authentic traditional delicacy from western region of our country "Mawa Puranpoli" which is served with load of ghee and milk.

Ingredients Serving: 10

  1. Split Bengal Gram (Chana Dal) - 1 Cup
  2. Jaggery (Gud) - 1 Cup
  3. Pure Ghee (Ghee) - ½ Cup
  4. All Purpose Flour (Maida) - 1 Cup
  5. Milk Solid (Mawa or Khoya) - 100 Grams

Instructions

  1. Preparation for Puran: Wash and pressure cook split bengal gram till you get 4 to 5 whistles. Keep aside the pressure cooker and allow it to get cool till the pressure gets released
  2. In a mixer jar add the boiled split bengal gram & jaggery and make a fine paste
  3. Heat 2 table spoons of pure ghee in kadai or non-stick pan. Once the ghee is hot add the fine paste. On a slow flame cook till the paste become golden brown and the rawness of the split bengal gram is removed
  4. Now add milk solid. Mix well and cook for another 4 to 5 minutes or till the paste becomes solid lump. Switch of the gas and keep the paste aside to get it cool
  5. Preparation for Dough: In a bowl add flour and one table spoon oil. Mix them and by adding sufficient water make soft dough. Keep it aside for resting it for at least 15 to 20 minutes
  6. Divide the dough into equal portions and with help of rolling pin make roti of 2 to 3 inches
  7. Place a portion of puran mixture in the center. Bring the edges of the roti together towards the center and join them to seal it
  8. With the help of rolling pin gently make a puran poli of your desirable size
  9. Heat non stick tawa. Place the rolled puran poli on it. When on side get brown turn over and cook other side till it gets brown
  10. Now apply ghee on both sides and cook for another 2 to 3 minutes or puran poli get golden brown
  11. Now the dish is ready can be served hot with loads of ghee and milk
