ABOUT Chaler payesh RECIPE

The traditional and quintessential kheer made with rice and dates Jaggery, cooked on a low flame with continuous stirring for that creamy kheer.

Ingredients Serving: 4

  1. Milk (preferably full fat) - 1 litre
  2. Rice - 1/4 th cup
  3. Dated Jaggery (crumbled) - 6 tbsp (can be increased or decreased as per personal preference)
  4. Elaichi powder (cardamom powder) - 1/2 tsp

Instructions

  1. Heat the milk in a heavy bottomed sauce pan with continuous stirring till it is just reduced to 3/4 th the quantity.
  2. Pre-soak the rice for few hours and drain it. Add this drained rice into the milk.
  3. Let the rice cook completely in the milk, keep stirring so that the milk doesn't burn at the bottom.
  4. Once the rice is cooked and the milk is reduced to half or more, then add the jaggery. Stir it and let the sugar dissolve, the kheer also gets thickened.
  5. Finally add the cardamom powder and switch off the flame. Serve the kheer hot or cold as per preference.
  6. P.S : Fried dry fruits can also be added.
