ABOUT Crisp aloo baingan RECIPE

A very simple but yummy dish with minimal ingredients.

Ingredients Serving: 3

  1. 250gm- sliced small eggplants
  2. 250gm- sliced medium sized potatoes
  3. Salt to taste
  4. 1/4 tsp- turmeric powder
  5. 1/2 tsp- garam masala
  6. 3/4 tsp- coriander powder
  7. 1.5 tsp- dried mango powder powder
  8. Red chilli powder as per taste
  9. fresh coriander for garnish

Instructions

  1. Take oil in a pan. Heat and add eggplant. Fry till crisp. Remove on a kitchen towel. In the same oil add potatoes and fry till golden and crisp. Remove on a kitchen towel.
  2. Take out all the extra oil from the pan, leaving a teaspoon of oil in it for the further use.
  3. Put all the masalas along with the vegetables. Mix well so the masala is coats everything. Add fresh coriander. Serve hot with fulkas.
