ABOUT Malpua with Rabri RECIPE

Malpua is a North India's sweet dish. Malpua immersed it in the sugar syrup and served with rabri. There are various types of method and different versions too in different parts of India.

Ingredients Serving: 4

  1. Ingredients for Chenna / Panner
  2. Milk - 4 cups
  3. Sour curds/yogurt - 2 tbsp
  4. Ingredients for Malpua batter
  5. Fresh chenna/Paneer - 4 tbsp
  6. Maida - 1/4 cup
  7. Water or Milk - 1/2 cup
  8. Cardamom powder - a pinch
  9. Baking soda - a pinch
  10. Ingredients for Sugar syrup
  11. Sugar - 1-1/4 cup
  12. Water - 1/2 cup
  13. Ingredients for Rabri/Rabdi
  14. Milk - 1/2 cup
  15. Fresh cream milk - 1/2 cup
  16. Sweet Condensed milk - 2 tbsp (adjust as per taste)
  17. Milk + Saffron - 1 tsp

Instructions

  1. Mix curds and curdle them leave for few mins and strain.
  2. Mix flour, chenna/paneer , cardamom powder and add water stir well without lumps (used hand blender) make a medium thick batter and keep aside
  3. Sugar and water bring to boil till one string consistency. Remove from the stove
  4. In a pot add milk and cream. Bring to boil till becomes medium thick. Add condensed milk. Add blanched chopped pistachios
  5. Heat oil or ghee in a semi flat pan. (do not over heat)
  6. Pour 1tbsp batter into ghee /oil gently. Cook on low flame until becomes golden color, trun on other side and cook
  7. Remove malpua and immerse it in the sugar syrup and leave for 2 mins drain and serve into plate
  8. Pour the Rabrid hot or cold garnish blanched chopped pistachios Repeat steps 2,3 & 4
