ABOUT Rajasthani boondi RECIPE

This is traditional Rajasthani sweet specially served during wedding functions. It is prepared with gram flour batter, dropping into hot oil and then dipped into sugar syrup and then strained. Served with elaichi seeds and rose petals for flavour. Tulsi leaves are also added to make it pure and auspicious during pooja rituals. It taste really awesome if combined with spicy gram flour noodles or we call it namkeen. Rajasthani people love this dish and its a must in almost every wedding ceremony or puja rituals. Ingredients Serving: 4

  1. For sugar syrup:
  2. 150 grams sugar
  3. One glass water
  4. Few big elaichi seeds
  5. For boondi:
  6. 200 grams besan or gram flour
  7. Oil for deep frying
  8. Edible Orange or red colour (optional)
  9. Rose petals and tulsi leaves for garnish

Instructions

  1. Take a pan and add water and sugar.Prepare sugar syrup of one string consistency and add elaichi seeds and keep aside
  2. Now take besan in a bowl and add water to make pakoda like batter( should be able to drop easily) add food colour if you wish
  3. Now heat oil in kadai. Place a boondi maker or jhar( a spoon which have many small holes in it) on kadai and hold it carefully
  4. Now take spoon full of batter pour onto the Bondi maker. The batter drops will start falling in the oil. Keep tapping the boondi maker to make more boondies falling down
  5. Fry few seconds and then remove from oil.make all the boondies like this
  6. Dip them into sugar syrup till the syrup is absorbed into them
  7. Remove the extra syrup from the boondies and garnish with rose petals and tulsi leaves and serve
