Stuff brinjals!!! A spicy and tongue tickling dish to make your day. It's very delicious version of stuffed brinjal to make every one fall in love with. The stuffing is made with coriander powder ref chilli powder turmeric powder salt amchur and a dash of lime juice to give a tangy kick to the dish. One secret ingredient is also in the list that is roasted peanuts which gives it a unique nutty flavour. Do try this once and see you dear ones licking their fingers.

Ingredients Serving: 5

  1. 500 grams small size brinjals
  2. Half cup roasted peanuts
  3. 3 tbsp red chilli powder
  4. 2 tbsp coriander powder
  5. Half tbsp turmeric powder
  6. Salt to taste
  7. One tbsp amchur powder
  8. Dash of lime juice
  9. 2 tbsp oil
  10. Half tbsp jeera
  11. 8-9 garlic cloves

Instructions

  1. For stuffing
  2. Grind the roasted peanuts coarsely and add chilli powder coriander powder turmeric powder salt amchur lime juice and crushed garlic cloves and mix well
  3. Wash the brinjals and remove the green top or crowns
  4. Now slit them into cross vertically. The pieces should not be separated, only deep cut should be given
  5. Now carefully stuff the peanut mixture in the brinjals
  6. Heat oil in a kadai and add jeera
  7. Then add the stuffed brinjals and stir carefully
  8. Keep covered and cook till soft. Stir occasionally in between so that brinjals doesn't burn
  9. Your stuffed brinjals are ready to serve
