This simple appetizer is a simple and elegant dinner party pleaser.

Fresh Corn Soup

Ingredients to make Fresh Corn Soup

  • 4 ears of corn
  • 1 stick of celery
  • 1 small onion
  • 1 small carrot
  • 2 cups stock
  • 1 tsp paprika
  • salt to taste
  • pepper to taste
  • dash of cream
  • Sprigs of thyme
  • 1 tsp butter

How to make Fresh Corn Soup

  1. 1. Bring the ears of corn to boil in a large pot of water. Simmer for 20 minutes
  2. 2. Chop the celery, leek and carrot. In a large pan, saute the vegetables and keep aside.
  3. 3. Once the corn has cooled down, scrape them for the kernels. Keep 1/2 a cup of kernels aside.
  4. 4. Blend the remain corn kernels with 1 cup of water till completely pureed
  5. 5. In the pan with vegetables, add the corn kernels and then the corn puree along with the remaining stock and the paprika, salt and pepper. Bring to a rolling boil and then simmer for 5 minutes.
  6. 6. Turn the gas off and stir in the cream and check for seasoning. Serve with sprigs of fresh thyme on top.

My Tip:

You can add a bit of crispy bacon for a nice salty hit
