About Hilsa pulao Recipe

Hilsa pulao is a very famous and delicious rice recipe among Bengali's.

Hilsa pulao

Ingredients to make Hilsa pulao

  • Basmati rice 300 gm-cleaned and soaked
  • 4 piece Hilsa fish
  • turmeric powder 1/2 tsp
  • Salt (4 tbsp for rice+ 1/2 tsp for fish)
  • sugar according to taste
  • Black pepper powder 1/2 tbsp
  • Yellow food colour a pinch
  • 4 slitted green chillies
  • 2 tbsp mustard Oil
  • 3 tbsp refine oil
  • 1 tbsp ghee
  • some cashews
  • Some Raisin's

How to make Hilsa pulao

  1. First cook the rice properly by adding sufficient amount of salt to it.
  2. Now add salt and black pepper powder in it and mix properly and carefully.
  3. Heat mustard oil in a kadhai and deep fry the hilsa fishes.
  4. Keep the the fried fish pieces out from the kadhai.
  5. Keep the fish fried oil separate from the fish.
  6. Now heat ghee + refine oil at the same time. Fry cashews and raisin's separately.
  7. Add slitted green chillies in the hot oil.
  8. Now add boiled rice, fried cashews-raisins and food colour into it.
  9. Fry it for 2-3 minutes, after that add fish oil and fried fish pieces into the rice.
  10. Mix gently and cover the fish pieces with rice. Now cover the kadhai with lid and cook it for 10 minutes on low flame.
  11. Now uncover the kadhai and serve hot.
