Summer season and every house will enjoy the taste of our king of all fruits....Yes you are right that is Mango. So today I am sharing Rajashthani Kache Aam ki Launji, Sweet And Sour Raw Mango Chutney) is Rajasthani chutney, which is an instant sweet mango pickle. The panch phoran give this launji a nice aroma. Sweetness from the sugar and the sour tanginess from the raw mangoes blend well to get sweet and sour chutney and pretty simple to make.

Ingredients Serving: 3

  1. Raw Mango - 2 nos chopped in to bite size pieces
  2. Fenugreek Seeds- 1/4 tsp
  3. Cumin Seeds- 1/4 tsp
  4. Nigella Seeds- 1/4 tsp
  5. Mustard Seeds- 1/4 tsp
  6. Fennel Seeds- 1/4 tsp
  7. Raisins- 6-7 pieces or more if you want
  8. Salt as per your taste
  9. Sugar- 1 small bowl
  10. Turmeric Powder- 1/4 tsp
  11. Chilly powder- 1/2 tsp
  12. Asafoetida- a pinch
  13. Water-1/2 cup

Instructions

  1. First chop Mango in to a bite size pieces and in plate take all the ingredients ready. Refer attached picture for your reference.
  2. Heat oil and add mustard seeds,cumin seeds,nigella seeds, fenugreek seeds and fennel seeds(Panchphoran) and fry for 2 mins and then add Asafoetida and fry well.
  3. Add Mango pieces and fry well for 5 mins .
  4. Now add salt,chilly powder,turmeric powder and mix well. Now reduce the flame and now cook for another 3 mins
  5. Now check if Mango turns soft and mushy add sugar and mix well.
  6. Now add raisins and mix well, now allow it to boil for 1 min
  7. Now add half cup water give a quick mix and allow it t boil until gravy thickens.
  8. Once gravy thickens switch off the flame and remove from stove.Allow it to cool
  9. Serve with Paratha or Pooris
